{"id":1262,"date":"2011-08-30T02:19:04","date_gmt":"2011-08-30T09:19:04","guid":{"rendered":"http:\/\/recipes.cuppylicious.net\/?p=1262"},"modified":"2011-08-30T02:19:04","modified_gmt":"2011-08-30T09:19:04","slug":"challah-egg-bread","status":"publish","type":"post","link":"http:\/\/recipes.cuppylicious.net\/?p=1262","title":{"rendered":"Challah (Egg Bread)"},"content":{"rendered":"<div id=\"attachment_1264\" style=\"width: 310px\" class=\"wp-caption alignright\"><a title=\"Challah\" href=\"http:\/\/recipes.cuppylicious.net\/wp-content\/uploads\/2011\/08\/challah02.jpg\" target=\"_blank\"><img aria-describedby=\"caption-attachment-1264\" loading=\"lazy\" class=\"size-full wp-image-1264 \" title=\"Challah\" src=\"http:\/\/recipes.cuppylicious.net\/wp-content\/uploads\/2011\/08\/challah01.jpg\" alt=\"Challah\" width=\"300\" height=\"124\" \/><\/a><p id=\"caption-attachment-1264\" class=\"wp-caption-text\">Braided egg bread<\/p><\/div>\n<p>Total time: Approximately 3 hours.<\/p>\n<p><em>Adapted from the Joy of Cooking.<\/em><\/p>\n<p>1 Tbsp active dry yeast<br \/>\n1 c warm water + 2 Tbsp warm water<br \/>\n4 tsp sugar + 1\/2 tsp sugar<br \/>\n3 c all purpose flour<br \/>\n1 1\/2 tsp salt<br \/>\n1 egg, slightly beaten<br \/>\n2 Tbsp vegetable oil<br \/>\npinch of saffron<\/p>\n<p>In a small bowl, combine yeast, 1\/2 tsp sugar and 2 Tbsp warm water.\u00a0 Set aside 3-5 minutes.<\/p>\n<p>In a large mixing bowl, combine flour and salt.\u00a0 Make a deep well in the middle of the flour.\u00a0 Pour in yeast mixture, egg, oil and saffron.\u00a0 Combine and beat well until all the flour appears incorporated and a ball of dough forms.\u00a0 Set aside 10 minutes.<\/p>\n<p>Turn out dough onto a well-floured surface and knead 6-10 minutes until smooth and pliable.\u00a0 Shape into a ball and place dough into a large, lightly greased bowl.\u00a0 Cover with a towel or saran wrap and let rise until doubled in bulk (about an hour).<\/p>\n<p>Punch down (do it!) and turn dough onto a lightly floured surface.\u00a0 Divide into three pieces and roll each piece to form a tapered cylinder about two feet long.\u00a0 Braid them together and tuck in the ends.\u00a0 Place braided dough onto a lightly greased or lightly floured cookie sheet to rise (about an hour).<\/p>\n<p>Bake in a preheated oven at 400F for 9 minutes.\u00a0 Turn the pan around and turn the heat down to 375F.\u00a0 Bake at 375F for 20 minutes or until darkly golden.<\/p>\n<blockquote><p>Some people like to brush their breads with egg to make them look pretty or develop a certain sort of crust. Eh&#8230; I guess it depends on if you&#8217;re trying to impress someone. We normally eat it so fast it doesn&#8217;t matter.<\/p>\n<p>I like to put a brownie pan filled with water on the bottom rack of the oven when I bake this bread. Keeping the humidity up in your oven will help your bread to cook more evenly and keep the temperature in the oven from fluctuating too much.
