{"id":615,"date":"2009-11-14T17:39:46","date_gmt":"2009-11-15T00:39:46","guid":{"rendered":"http:\/\/recipes.cuppylicious.net\/?p=615"},"modified":"2011-08-29T11:49:36","modified_gmt":"2011-08-29T18:49:36","slug":"leftover-oatmeal-cookies","status":"publish","type":"post","link":"http:\/\/recipes.cuppylicious.net\/?p=615","title":{"rendered":"Leftover Oatmeal Cookies"},"content":{"rendered":"<div id=\"attachment_619\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/recipes.cuppylicious.net\/wp-content\/uploads\/2009\/11\/oat_choc_chip.jpg\" target=\"_blank\"><img aria-describedby=\"caption-attachment-619\" loading=\"lazy\" class=\"size-full wp-image-619 \" title=\"Oatmeal Chocolate Chip Cookies\" src=\"http:\/\/recipes.cuppylicious.net\/wp-content\/uploads\/2009\/11\/oat_choc_chip.jpg\" alt=\"Oatmeal Chocolate Chip Cookies\" width=\"300\" height=\"235\" \/><\/a><p id=\"caption-attachment-619\" class=\"wp-caption-text\">Oatmeal Chocolate Chip Cookies<\/p><\/div>\n<p>Total time:\u00a0 1.5 hours.<\/p>\n<p>2 cups <a href=\"http:\/\/www.foodnetwork.com\/recipes\/alton-brown\/overnight-oatmeal-recipe\/index.html\" target=\"_blank\">leftover steel-cut oatmeal<\/a><br \/>\n1 cup (2 sticks) butter, softened, OR 1 cup shortening<br \/>\n1 cup brown sugar, packed<br \/>\n3\/4 cup granulated sugar<br \/>\n3 cups all-purpose flour<br \/>\n2 large eggs, well beaten<br \/>\n1 Tbsp vanilla<br \/>\n1 teaspoon salt<br \/>\n1 teaspoon baking soda<br \/>\n1\/2 teaspoon freshly grated nutmeg<br \/>\n1 teaspoon cinnamon<br \/>\n1 1\/2 cups chocolate chips (optional)<\/p>\n<p>Preheat oven to 350.<\/p>\n<p>In a large mixing bowl, combine butter and both types of sugar until smooth. Add vanilla and egg, mix until smooth. Add salt, cinnamon, and nutmeg, mix until smooth.<\/p>\n<p>In a small bowl, combine half the flour and all the baking soda. Gradually add flour mixture to the dough.<\/p>\n<p>Continue to add remaining flour slowly. If your dough starts to become \u201cdry\u201d before you finish, stop with the flour and move on.<\/p>\n<p>Mix in oatmeal. Fold in chocolate chips and other optional ingredients.<\/p>\n<p>Spoon out dough by large tablespoonfuls onto prepared cookie sheets, leaving at least 2 inches between each cookie.<\/p>\n<p>Bake until cookie edges turn golden brown, about 10-12 minutes. Cool 1 minute on cookie sheets before moving to cooling rack.<\/p>\n<blockquote><p>Super moist deliciousness. Was it the cooked oatmeal? The shortening? I&#8217;m not sure, but my cookies were super soft, whether in the oven for 10 minutes or 18 minutes. They looked &#8220;undercooked&#8221; when I pulled them out at 13 minutes, but I found that 13 was definitely the magic number.<\/p>\n<p>Be sure to let these cool on the cookie sheet before trying to move them, and if you&#8217;re using chocolate chips, make sure your spatula is tough enough to scoop the cookies off without ripping them in half.<\/p><\/blockquote>\n","protected":false},"excerpt":{"rendered":"<p>Cooked steel-cut oats add depth to a basic chocolate chip cookie recipe.
