Steph challenged us to make homemade noodles without the help of a motorized pasta machine. She provided us with recipes for Sp\u00e4tzle and Fresh Egg Pasta as well as a few delicious sauces to pair our noodles with!<\/p>\n<p>Ingredients<br \/>\n2 large eggs<br \/>\n\u00bd cup (120 ml) milk or buttermilk<br \/>\n1\u00bd cups (360 ml) (210 gm) (7\u00bd oz) all-purpose (plain) flour (approximately \u2013 have more on hand, in case)<br \/>\nup to 1 tablespoon (15 ml) of herbs and spices (optional \u2013 <span style=\"color: #a8c254;\"><em>I added 1 tsp nutmeg instead<\/em><\/span>)<br \/>\n1 tablespoon (15 ml) (3 gm) fresh parsley, chopped (optional decoration, <span style=\"color: #a8c254;\"><em>I skipped this<\/em><\/span>)<\/p>\n<p>Directions:<br \/>\n1. In a large bowl, whisk together eggs, milk and any herbs and spices that you want to incorporate into the sp\u00e4tzle.<br \/>\n2. Incorporate the flour in small batches, by sifting in a small amount at a time and mixing until the flour is completely integrated. Keep adding flour until the dough becomes elastic, smooth and very hard to stir.<br \/>\nBoil a large pot of water. Dip a table spoon into the boiling water to wet it. To form the sp\u00e4tzle, fill the tablespoon about half way with dough, and release into the boiling water.<br \/>\n4. Boil for 15 to 20 minutes.<br \/>\n5. Drain the water from the sp\u00e4tzle. Because it&#8217;s full of fun craters where water can hide, you will need to drain it especially well. Toss with the chopped parsley.<\/p>\n<p>Seen here paired with <a href=\"http:\/\/recipes.cuppylicious.net\/?p=1365\" target=\"_blank\">chicken paprikash<\/a>.<\/p>\n<blockquote><p>I pushed my dough through these holes I found in what I think is a <a href=\"http:\/\/recipes.cuppylicious.net\/wp-content\/uploads\/2011\/09\/spatzle02.jpg\" target=\"_blank\">food processor salad bowl<\/a> (I really have no idea, I just found <a href=\"http:\/\/recipes.cuppylicious.net\/wp-content\/uploads\/2011\/09\/spatzle02.jpg\" target=\"_blank\">this thing<\/a> in my &#8220;miscellaneous drawer&#8221; in the kitchen). I got a little warm standing above the boiling water, but it was worth it.
