Make them with or without meat, with or without flavor. I do not recommend putting cheese inside of them, as the dough tends to soak it all up.<\/p>\n<p>Keep in mind, all ingredients are optional; I use what I have available.<\/p>\n<p>2 chicken breasts<br \/>\n3 medium russet potatoes, cut into 1\/4&#8243; cubes<br \/>\n1-2 <a href=\"http:\/\/en.wikipedia.org\/wiki\/Poblano\" target=\"_blank\">poblano<\/a> peppers, finely chopped<br \/>\n1 medium onion, finely chopped<br \/>\n3 cloves of garlic<br \/>\n2 <a href=\"http:\/\/en.wikipedia.org\/wiki\/Habanero_chili\" target=\"_blank\">habanero<\/a> or <a href=\"http:\/\/en.wikipedia.org\/wiki\/Serrano_pepper\" target=\"_blank\">serrano<\/a> peppers<\/p>\n<p>That&#8217;s where I always start. My preference is to put the meat, onions, seasonings and poblano peppers in my crock-pot on low, overnight with two cups of water.<\/p>\n<p>Tonight, I boiled my chicken breasts with a tablespoon of lime juice, then separated and shredded the meat with two forks.<\/p>\n<p>Boil your diced potatoes until they&#8217;re tender, but not soft, about 5 minutes. In a skillet, fry your onions and garlic until your onions start to turn clear, about 3 minutes on med-high. You can add any other vegetables or peppers at this time and fry them in the skillet &#8211; if you are not using a crock-pot, then I&#8217;d definitely fry all of your vegetables before putting them in your mixing bowl.<\/p>\n<p>Place shredded meat and fried vegetables in a large mixing bowl. For potato pockets, we normally do the following for flavor:<\/p>\n<p>1 tablespoon <a href=\"http:\/\/en.wikipedia.org\/wiki\/Anaheim_pepper\" target=\"_blank\">California chili<\/a> powder (for color!)<br \/>\n2 tsp salt<br \/>\n1 tsp ground cumin<br \/>\n1 tsp ground cinnamon<br \/>\n1 tsp paprika<br \/>\n1 tsp black pepper<br \/>\njuice of one lime<\/p>\n<div id=\"attachment_321\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/recipes.cuppylicious.net\/wp-content\/uploads\/2009\/06\/empanadalamo.jpg\"><img aria-describedby=\"caption-attachment-321\" loading=\"lazy\" class=\"size-full wp-image-321\" title=\"empanadalamo\" src=\"http:\/\/recipes.cuppylicious.net\/wp-content\/uploads\/2009\/06\/empanadalamo.jpg\" alt=\"It's the Empanadalamo!\" width=\"300\" height=\"225\" \/><\/a><p id=\"caption-attachment-321\" class=\"wp-caption-text\">It&#39;s the Empanadalamo!<\/p><\/div>\n<p>Add to your vegetable mixture, mix well&#8230; or add nothing and use it as is!<\/p>\n<p>I like to scoop my mix into <a href=\"http:\/\/recipes.cuppylicious.net\/?s=empanada+dough&amp;submit.x=0&amp;submit.y=0&amp;submit=Search\" target=\"_blank\">empanada shaped pastries<\/a>, but you could also just make burritos or lettuce wraps.<\/p>\n<p>Typical accompaniments:<br \/>\nsalsa, guacamole, sour cream, cheese, cilantro, green onions, lime<\/p>\n<p>Try it with:<br \/>\nshredded beef, pork or tofu; black beans, pinto beans, or kidney beans; corn, carrots, peas, cabbage, spinach &#8211; frozen, canned or fresh (but not all at once!)<\/p>\n<blockquote><p>You can place your uncooked hot pockets or empanadas on a cookie sheet and freeze separately, then pile them all up in a freezer bag for later use. Or cook them all at once; they keep for up to 3 days in the refrigerator or 3 months in the freezer, and they reheat amazingly well (must be the shortening in the dough?).<\/p><\/blockquote>\n","protected":false},"excerpt":{"rendered":"<p>Spicy meat, vegetables and potatoes with empanada dough make a nice little homemade hot pocket.
