The focus of this challenge is to <strong>marinade<\/strong>.<\/p>\n<p>Total time:\u00a0 40 minutes, plus marinade time.<\/p>\n<p>1\/2 small onion, chopped<br \/>\n2 garlic cloves, crushed<br \/>\n1 Thai dragon (bird&#8217;s eye) chili pepper<br \/>\n2 T ginger root, chopped (4 cm cubed)<br \/>\n2 T lemon juice (1 oz or 30 mls)<br \/>\n1 T soy sauce (0.5 oz or 15 mls)<br \/>\n1 T fish sauce (0.5 oz or 15 mls)<br \/>\n1 tsp ground coriander (5 mls)<br \/>\n1 tsp ground cumin (5 mls)<br \/>\n1\/2 tsp ground turmeric (2-2.5 mls)<br \/>\n2 T vegetable oil (or peanut or olive oil) (30 mls)<br \/>\n1 pound of pork (loin or shoulder cuts) (16 oz or 450g)<\/p>\n<div id=\"attachment_670\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/recipes.cuppylicious.net\/wp-content\/uploads\/2009\/12\/tofu_satay_chicken.jpg\" target=\"_blank\"><img aria-describedby=\"caption-attachment-670\" loading=\"lazy\" class=\"size-full wp-image-670 \" title=\"tofu_satay_chicken\" src=\"http:\/\/recipes.cuppylicious.net\/wp-content\/uploads\/2009\/12\/tofu_satay_chicken.jpg\" alt=\"Pan-fried tofu satay and broiled chicken satay\" width=\"300\" height=\"220\" \/><\/a><p id=\"caption-attachment-670\" class=\"wp-caption-text\">Pan-fried tofu satay and broiled chicken satay<\/p><\/div>\n<p>Directions:<br \/>\n1. Cheater alert: If you have a food processor or blender, dump in everything except the pork and blend until smooth. Lacking a food processor, I prefer to chop my onions, garlic, ginger and peppers really fine then mix it all together in a medium to large bowl.<br \/>\n2. Cut pork into 1 inch strips.<br \/>\n3. Cover pork with marinade. You can place the pork into a bowl, cover\/seal and chill, or place the whole lot of it into a ziplock bag, seal and chill.<br \/>\n4. If using wooden or bamboo skewers, soak your skewers in warm water for at least 20 minutes before preparing skewers.<br \/>\n5. Gently and slowly slide meat strips onto skewers. Discard leftover marinade.*<br \/>\n6. Broil or grill at 290\u00b0C\/550\u00b0 F (or pan fry on medium-high) for 8-10 minutes or until the edges just start to char. Flip and cook another 8-10 minutes.<\/p>\n<p>* If you\u2019re grilling or broiling, you could definitely brush once with extra marinade when you flip the skewers.<\/p>\n<p>Shown above with <a href=\"http:\/\/recipes.cuppylicious.net\/?p=100\" target=\"_blank\">peanut sauce<\/a>.<\/p>\n<div id=\"attachment_696\" style=\"width: 310px\" class=\"wp-caption alignright\"><a href=\"http:\/\/recipes.cuppylicious.net\/wp-content\/uploads\/2010\/01\/texmex_satay.jpg\" target=\"_blank\"><img aria-describedby=\"caption-attachment-696\" loading=\"lazy\" class=\"size-full wp-image-696 \" title=\"TexMex Pork Satay\" src=\"http:\/\/recipes.cuppylicious.net\/wp-content\/uploads\/2010\/01\/texmex_satay.jpg\" alt=\"TexMex Pork Satay\" width=\"300\" height=\"185\" \/><\/a><p id=\"caption-attachment-696\" class=\"wp-caption-text\">TexMex Pork Satay<\/p><\/div>\n<p>I also did this challenge using my trusty <a href=\"http:\/\/recipes.cuppylicious.net\/?p=71\" target=\"_blank\">Pork Satay II<\/a> marinade on tofu, pan fried (middle picture), chicken satay marinated in <a href=\"http:\/\/recipes.cuppylicious.net\/?p=214\" target=\"_blank\">raita<\/a> (shown with tofu), and the experimental but oh-so-wonderful TexMex Pork Satay marinated in a Chevy&#8217;s inspired <a href=\"http:\/\/recipes.cuppylicious.net\/?p=672\" target=\"_blank\">chipotle and jalapeno cream sauce<\/a>.<\/p>\n<p>I also did all three dipping sauces suggested in the challenge (<a href=\"http:\/\/recipes.cuppylicious.net\/?p=100\" target=\"_blank\">peanut sauce<\/a>, <a href=\"http:\/\/recipes.cuppylicious.net\/?p=681\" target=\"_blank\">Thai pepper dip<\/a>, <a href=\"http:\/\/recipes.cuppylicious.net\/?p=683\" target=\"_blank\">tamarind dip<\/a>, with changes), as well as using the <a href=\"http:\/\/recipes.cuppylicious.net\/?p=672\" target=\"_blank\">TexMex dip<\/a> and my favorite <a href=\"http:\/\/recipes.cuppylicious.net\/?p=214\" target=\"_blank\">raita<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Just like Pork Satay II, except includes minced ginger root, minced dragon chili and fish sauce.
